CHARACTERISTIC OF THE VINEYARDS
Glera: uneven vineyards of the Prosecco area of Treviso, totally located on the southern slopes of the hills, the farming system is the characteristic double overturned. Pinot Nero: flat vineyard well exposed to the south, sylvoz training system.
The bunches of Glera are softly pressed and the must is fermented at a low temperature in stainless steel tanks. Pinot Noir, on the other hand, is vinified in red with the classic fermentation and maceration on the skins. After a few months of refinement, the base wines are transferred to an autoclave for the second fermentation, which takes place with the Martinotti or Charmat method. After about two months, the wine is ready to be bottled.
